This is a quick healthy but filling meal that is delicious.
INGREDIENTS:
* 1 lb of ground turkey (I use 95% lean Jenny-o)
* 1 head of cauliflower
* 1/2 cup of pasta (I use wheat noodles)
* 2 tablespoons of lemon juice
* 2 tablespoons of oil (I use avocado oil)
* 3 tablespoons of butter
* 3 cloves of garlic
* 2 tablespoons of onion powder
* 2-3 tablespoons of hot sauce
* 1/2 cup of water
* Chopped parsley and pepper flakes for flavor
DIRECTIONS:
Boil a pot of water and add pasta. Once fully cooked, put to the side.
Chop cauliflower into smaller pieces (not as small as riced cauliflower).
Heat a large skillet with your oil of choice and saute the cauliflower until it is a light golden color. Once cauliflower is cooked, add lemon juice and stir to coat. Put cauliflower to the side in a bowl/plate.
Using the same skillet, add butter and then the ground turkey. Cook until it is no longer pink. Add the garlic and all seasonings including the water and hot sauce. Slowly stir for a few minutes.
Move ground turkey to one side of the skillet and add the cauliflower on the other side of the skillet. Turn burner on slow and carefully toss the cauliflower in the seasoned sauce.
